How To Make the perfect Italian Pizza?

6th January 2019

The steps below can be followed so as to make a perfect Italian Pizza.

  1. Sprinkle 2 teaspoons of quick yeast into a medium bowl with 200ml warm water, this water should not be too hot or too cold. Yeast like this kind of water and should be stirred until the yeast dissolve. Then add 1 heaped teaspoon of sugar.
  2. Slowly stir in as much plain flour as the water needs to form a bouncy dough ball.
  3. get your hands in to gently massage it to a smooth ball.
  4. Grease up a bowl with some rapeseed oil and put the dough inside, turn the dough around so that the top is oiled slightly.
  5. Make a cross on top of the dough with a knife. This is an old Italian tradition which serve as a way of blessing the bread.
  6. Cover the bowl and put the dough in the fridge to rest for a minimum of four hours.
  7. Preheat the oven to about 200°c, gas 5
  8. Pour the dough out of the bowl and onto a floured surface. Punch it down, getting rid of any bubbles.
  9. Divide the dough in half and let it rest for a few minutes.
  10. Roll each section into a 12-inch disc. You can now decide how thick you want the pizza to be. You can decide whether you want Neapolitan-style or Roman-style, however, you need to know that it will puff up a little bit as it’s baked.
  11. Transfer the dough onto an oiled pizza pan or lined baking tray.
  12. Add tomato sauce, if you want a pizza rossa, lots of pizzas in Italy are actually pizza bianca, without tomato sauce, so you can brush the edges of the crust with a little bit of rapeseed oil. Add some topping but not too many.
  13. Bake each pizza for about 10 minutes, you can then add mozzarella cheese, this and other ingredients can be sliced on top.
  14. Let the pizzas bake until the crust is browned and the cheese is melted. By lifting up the pizza to peek underneath, you can make sure the bottom has browned too.
  15. You can then remove your pizzas from the oven and garnish with some basil leaves so as to add a real Italian touch.
