Allow Chops to reach room temperature. Place in dry hot pan and do not move/stir. Allow to caramelise for 2 minutes then turn the chops over and place pan in oven at 200c or gas mark 5 or transfer the turned chops to lined baking tray and cook at 200c or gas 5. Cook until the meat reahes 71c. Then rest covered with piece of parchment for 5 minutes.
