On a high heat place an oven proof frying pan and allow to heat. Add sugar and the water. Do not stir but allow to caramelise. Then remove from the heat and gently stir. Then place sliced fruit on the caramel with optional nuts and raisins. Cover the fruit with the puff pastry folding over the puff pastry to fit the pan. Place the pan in the oven for 20 minutes or until the puff pastry has risen and is golden. Remove the pan from the oven. Drain any excess liquid and turn tarte tatin onto a plate to serve.
