    Allow steak to reach room temperature. Place in dry hot pan and do not move/stir. Allow to caramelise for 2 minutes then turn the steak over and place pan in oven at 200c or gas mark 5 or transfer the turned steak to lined baking tray and cook at 200c or gas 5. Cook to the following temperatures. Rare-54c-60c. Medium rare-60c-63c. Medium-68c-71c.Well done-74c-77c Then rest covered with piece of parchment for 5 minutes
